Establishments must meet the legal obligations of their profession, particularity with regard to health and safety and
access for the disabled.
Establishments receive the label after meeting the criteria of a mystery audit carried out by a specialist (renewable
within a maximum two years).
Establishments are monitored on an ongoing basis by means of customer satisfaction questionnaires made available to patrons
and also Tourist Office and Pays d'Accueil recommendations.

The operation is financed by the French State, Upper and Lower Normandy Region Tourist Departments, Upper and Lower Normandy
Regions, the Chambers of Commerces and Industry and Upper and Lower Normandy and European Union Regional chambers of Commerce
and Industry.
